This little street eatery in Bab Doukkala is open all day, every day and serves delicious kebabs with morsels of kidney, liver and fat or mince, like an open sausage. It has a pot of mint tea ready at all times.

And simple it is.

Simple and very effective. Hundreds of meals are prepared on this little grill every day. Note the kebab sticks holding up the kettle.

The raw kebabs on cool coals, with smouldering logs giving flavour. This guy knows what he is doing...

The first turn..

Smoky, slow-grilled lamb's liver, kidneys and tailfat. Mmmm.
