This tiny barbecue restaurant serves a stream of people all day long from morning till late night. Shish kebabs made of little cubes of lamb's liver, kidneys and tail fat are grilled over a mild heat getting flavour from the smoldering logs next to them.
The slow grilling melts the fat, basting the meat as it is grilled. Note how this man expertly arranges the fat to go over the meat when he makes the kebab. The end result is succulent, with a crispy outside and a smoky flavour. Delicious.
